Crab as multi layer picture
The crabs (Brachyura) - also real crabs or short-tailed crabs - are the largest infrastructure of the order decapods (Decapoda) with approx. 6,800 species. Most crab species live in the sea, but some also live in fresh water (see freshwater crab) or on land. Crabs have an abdomen (pleon) that is transformed into a short tail plate, which lies folded under the head chest piece (cephalothorax) - the space in between is used by the females as a brood chamber.
The male mating organs (gonopods) of crabs are derived from double-branched cleavages, the latter being found in females as pleopods (these are used in brood care and can carry hundreds of thousands of eggs). In the males, pleopods have regressed or disappeared entirely. Only the first two pairs of pleopods are regularly preserved as gonopods: the first pair is tube-like, the second mostly thread-like and located in the tube of the first, presumably according to a piston-pump principle. The first pair of legs on the trunk has been transformed into large pincers, the eyes are on stalks. Crabs can walk sideways ("crab walk") remarkably quickly.
Some types of crab are considered a delicacy, most notably edible crabs, deep-sea crabs and the Japanese crab.
Various other types of crabs also have a crab-like physique and are named accordingly, especially the family of stone and king crabs. In northern Germany, in contrast to zoological custom, shrimp are also referred to as "crabs" (see crab fishing). In the kitchen language, crabs usually mean shrimp - especially North Sea shrimp (see North Sea shrimp).
